The goals of the adventure were to provide a behind-the-scenes look at New York City’s ever-expanding restaurant landscape as well as connect progressive leaders in hospitality with one another for provocative discussions in a unique, food-focused arena. The experience serves to educate top-level food executives to take new, progressive ideas back to their own operations. And now, six years later, the Avero Elliot Underground Culinary Tour, has become a coveted, exclusive, invitation-only industry event known for connecting leaders and sharing ideas in an open environment with the most progressive restaurateurs and chefs at the helm.
Throughout this year’s two-day adventure, these restaurateurs visited 15 of the most innovative and exciting restaurants, coffee labs, breweries, specialty markets and cocktail lounges in Manhattan and Brooklyn. They sunk their teeth into crackly thin-crust pizza, savory sandwiches, gourmet bar cuisine and decadent pasta while sipping artisanal coffees, locally crafted brews and unorthodox wines. Along the way, New York’s most progressive chefs, restaurateurs, baristas, cicerones and sommeliers shared their unique passions, philosophies and expertise.
