The Avero Externship is a new two-day intensive workshop at the Avero headquarters in New York City, during which two high school graduates learn about the latest trends in culinary concepts, ways to use restaurant software to manage revenues and reduce costs, and gain invaluable career counseling. Created in partnership with Careers Through Culinary Arts Program (C-CAP), a renowned organization started in 1990 that has awarded close to $40MM in scholarships and awards to high school culinary arts students and alumni, the Avero Externship committee is thrilled to announce this year’s recipients: Sofia Mendoza and Robert Guarneri.
Avero and C-CAP selected the two winners from a pool of 20 highly skilled high school seniors from New York City public school culinary arts programs. The twenty seniors were hand-selected through the yearly C-CAP culinary arts award competition, where students compete for full or partial institutional and cash scholarships. Students undergo a rigorous process of essay writing, interviews, and a food challenge to be selected for the awards, and C-CAP invited Avero to attend the food challenge, which took place at ICE (The Institute of Culinary Education) on March 26.
The event was incredibly exciting and inspirational — each student competitor only had two hours to prepare their full tasting plate, consisting of one savory and one sweet item. Students were judged by highly acclaimed chefs in the food industry, includingMaria Loi of Loi Restaurant, Matt Hoyle of Nobu57, and Thiago Silva of EMM Group. The highlight of the competition was definitely the Poulet Chasseur avec Pommes de Terre Chateau, but all in all the event was an amazing collaboration across New York public school students, teachers, chefs, C-CAP and their sponsors, and ICE.
