Each year Avero, Careers through Culinary Arts Program (C-CAP) and Epicurean Charitable Foundation of Las Vegas (ECF) bring two hospitality students and their mentors to New York City for a four-day immersion trip into the food and beverage industry. The two lucky recipients this year were Karen Nava, junior at University of Las Vegas Nevada, and Oliver Malcolm, junior at Kendall College in Chicago.
Along with their mentors Ana Marie Mormando, General Manager of The Mansion at MGM Grand, and Brother Luck, Executive Chef of Brother Luck Street Eats in Colorado Springs, Karen and Oliver had the rare opportunity to meet and learn from leading chefs, managers, restaurateurs and hoteliers at some of the city’s most prominent dining establishments. This included The Nomad, Baccarat Hotel, Reynard, Brooklyn Bowl, Union Square Greenmarket, Eataly, The Smith and Rebelle, just to name a few.
In addition to visiting these popular New York hotspots, the students and their mentors received in-depth training from the Avero team on how the company’s restaurant software and analytics help food and beverage operators improve efficiency and guest experience while driving profits.
